Substitute kale for escarole?

I'm trying a new recipe this week - a Tuscan soup with white beans and escarole. I've made somewhat similar soups before and used kale. Do you think it would significantly change the recipe to substitute kale for this one? My small town isn't upscale enough to stock escarole in the grocery stores.

  • I don't think so, in fact i think it would be a better choice. I find escarole to be rather bitter.

  • I think it would be fine. I would go so far as to sub spinach. I can't stand nearly all leafy greens, but I can handle spinach.

  • It should substitute well. Kale takes a bit longer to cook so keep that in mind if it asks you to add the greens at the end.
