If I soak peeled potatoes in water overnight will they be okay or will they turn brown?

It would save me a lot of time tomorrow if I could just peel them up tonight.

  • If you can keep them under water it will reduce the browning. The worst problem though is they absorb too much water. Are there other things you can do tonight to help shortcut tomoroow. Like dice veggies, pasta salad is always best made the day before. Trimming meat.

  • If you soak them overnight they will become grainy. Kind of like potatoes get whenyou put them in with a roast too too long. The texture and taste become gross. However, you could make your soup tonight then reheat tomorrow.

  • They will be fine in water overnight, in the fridge. I do it all the time and they are just fine - especially if you're going to make soup.

  • Not a problem to peel them and put them underwater overnight. They won't turn brown and they won't soak up water.

But when we make potato soup, we leave the skins on...yummy!
