The key to a good crock pot beef stew is to brown it and season it on the stove before you put it in the pot. Season with salt and pepper and brown well, add to pot.
Quarter an onion and add to pot. ( I don't cut it up all the way because we don't like the pieces, but you can. . .)
Add a half a bag of baby carrots, or more if you like, celery cut in large dice and two cloves of finely chopped garlic. Season with salt and pepper. Add one whole dark beer (guinness is good, but a lager will work) and one can of cream of mushroom soup, and three red potatoes, large dice. If sauce is to thin you can thicken it at the end with a cornstarch slurry. Cook 6-8 hours on low, season to taste. Add one handful frozen peas and stir.
