what is couscous? I've seen it mentioned in recipes but have never herd of it

  • Couscous is a coarsely ground semolina pasta. Partially cooked coucous is available around here and is cooked by adding the pasta to boiling water and letting it sit- kind of like making instant rice. The texture is very pleasing, again similar to a finely chopped rice, and the taste is like a pasta taste. It can be made with broth and butter or other seasonings.
