What do you serve with pot roast?

I want to leave out another starch since I'm putting a bunch of potatoes in the pot.. I'm also making a salad.. but something else?

  • If you have the carrots and potatoes int he pot with the roast and you are serving a salad.... I can't really think of anything you would *need*... I think dinner rolls are good (even though you said no starch) because you can sop up the yummy broth with them.

  • I don't roast potatoes with my roast anymore unless they are whole red 'new ' pototes Regular ones get really grainy. I do throw in carrots and rough chopped onions. If I don't have new potatoes I do mashed russets. My kids aren't big salad eaters so I usually make peas , brocolli or green beans with slivered almonds.

  • We usually throw potatoes and carrots in the crockpot towards the end with the roast. Then serve side salad.

  • Cauliflower, broccoli, or green beans would be fine. I love roasted parsnips. I cut them into match sticks and coat with a little olive oil and bake them at 450 for about 20 min. they come out so sweet!!!
