  • Season the chicken with some salt and pepper, garlic powder/salt, and bake it at 375. Mash the potatoes. When the chicken is done, you can either make homemade gravy or what my family calls "cheater's gravy": add a can of mushroom soup to the chicken pan, some milk, some more seasoning, and heat it on the stovetop until it blends together and is hot. Add a veggie and there's a whole meal. Or you could bake the chicken and make baked potatoes too.

  • Well is that all you have? Cause you could make mashtatos, beat them and put them in a oven pan, cut the chicken up in small pieces, fry them put them in there (dont mix it just lay them on top) get some cream of mushroom soup pour that on top, get some buscuts and make those on top and bake it for 20-30 mins.

  • I'd put the chicken in a roasting pan and halve the potatoes and place them alongside with salt and pepper and a little water or broth. Bake an hour and half or so until the chicken is done. Easy.
Serve with a salad and cooked vegetables. If you want to make the most of the oven being on, do some baked beans at the same time- put a big can of beans in a casserole with some bacon, chopped onion, some brown sugar or pancake syrup- bake along with the chicken.

  • I forgot to mention- cover the roasting pan.

  • If the chicken is whole, roast it and make mashed or roasted potatoes. Or make chicken stew (simmer the chicken in broth with celery & onion; remove & pull chicken from bones to add back to stew. to the broth, add sliced carrots, diced potatoes, salt & pepper. Add chicken. Thicken with a roux or slurry, serve over rice or biscuits).

If it's on the bone, but in pieces, fry it and make cream gravy to serve over mashed potatoes. Or, thinly slice the taters and line a buttered baking dish with them, then top with the chicken (seasoned). Roast until chicken is cooked through.

If boneless, pound thin, dredge in seasoned flour, saute. Toss taters with EVOO, salt & rosemary, then roast.

  • ...cont:

You can also season the chicken with EVOO, rosemary, lemon, etc and make it with baked potatoes.

One more: thinly slice potatoes, then toss with a couple tbsp of flour, a tsp or so of onion powder and celery salt, fresh ground pepper. Layer with thin boneless, skinless chicken pieces (season these also with a little poultry seasoning, paprika, s&p) in a buttered baking dish. Add chicken stock to the top of the potatoes and chicken, then add 1/4 cup heavy cream. Bake at 350*f for 45-55 min. Season to taste with salt & pepper.

  • try putting italian dressing on the chicken and let that bake..(my favorite) you can mash up the potatoes, and add sour cream and cheddar cheese to flavor them.. (or garlic,or etc.) or you can try slicing the potatoes up and making potato wedges.. or there is always good ol fashion bbq chicken...
