    Homemade Nachos/Tacos
    Cook one pound ground beef, drain, add taco seasoning with one cup of water. Let simmer till almost all water is gone or all gone. Take two cans of cheese. (cambells or cheaper brands) and heat on low, till hot.
    In bowl, pour half of taco meat, then layer of cheese, then rest of taco meat, then cheese, top with sour cream, jalpenos, ect. Dip corn chips and enjoy!

  • You can also take one small sirloin roast, tell the ppl at the counter or you can do it at home. Cut into tips or small pieces. Fry in hot oil turning till brown on the outside. In a electric skillet add meat and one can of french onion soup, and half can of water. Cook till meat is tender and done in middle. Once it is done take once pouch of brown gravy and 3/4 c water, pour it in and let simmer till there is a gravy over the meat. Serve with green beans, corn, cornbread, or whatever. makes a great meal.

  • Chicken pot pie......2 deep dish pie shells...2 chicken breast cooked (or 1 can of chicken breast), 1 can mixed veggies (half bag frozen), 1 can cream of chicken or mushroom soup....mix all into one pie shell, take the 2nd shell out of the pan and place on top, cook until brown.

  • This is a very low fat one and tastes great and you can do a lot with it.

    Ingredients: 3-6 chicken breasts; 1 can Rotel Tamatoes and Chiles/Peppers Original Flavor; 1 pack of LOW SODIUM Old El Paso Taco seasoning; 1/2 cup-3/4 cup of water depending on how many chicken breasts. Cute chicken on all fat; mix chicken Rotel and taco seasonings in crock pot, add water, cook for 6 hrs, 30 min before its done take out the chicken and pull it apart then put it back for the remaining 30 min so it can soak up extra juices. Then you can make tacos, enchilladas and quesadillas and anything else you can think of. Its SOOOOO Good!

  • Mexican Chicken & Rice with tortillas
    1 box of Spanish rice,prepare as directed on box
    Sherreded cooked Chicken breasts or a whole chicken
    2 cups Mexican cheese,sherreded
    10 flour tortillas
    Preheat oven to 350 degrees.Spread prepared Spanish rice in a 9 inch baking dish,chicken,then sprinkle cheese over the top.Warm tortillas in microwave for 3 mintues or whatever is comfortable for you.Serve with smashed seasoned avocado,salsa,sour cream.
    I made this one up all in my own head.My son and husband love this dish!!!
