What do you put in your homemade meatballs?

Just curious what other people put in theirs.

  • I make mine like meatloaf. I use veal, pork, and beef mixture (sometimes turkey if it's on sale), onion soup mix, breadcrumbs, a little Parmesan cheese, italian seasoning, and salt and pepper.

  • I cube soft bread, soak it in milk. Squeeze out the milk, add eggs, finely chopped onion, minced garlic, salt pepper, and some grated parmesean cheese. Then I add dry bread crumbs and mix until they hold together. Don't over do the dry bread crumbs because they will be too tough. The mixture should be a little loose.

  • Ground veal, pork and beef, fresh crushed garlic, fresh oregano, fresh basil, grated Parmigiano-Reggiano, dried seasoned bread crumbs, eggs, salt and pepper.


    Parmigiano-Reggiano is the Italian cheese. Parmesan is an american version. And the taste is no where near as good.

  • Ground beef, ground pork (from the butcher..that nearly fat free stuff at the grocery store has no flavor!), bread or cracker crumbs, parmesan, romano & asiago cheeses, parsley, eggs, garlic, salt & pepper...and here's my secret: 1/4 cup of spaghetti sauce. Using the sauce and extra eggs makes for very moist, flavorful meatballs that brown up deliciously well! Oh, and sometimes I add very finely minced shallots, just because I love them!

  • this is a little different but so good. its something that my mom just threw together one time when i was visiting but i have made it over and over.

    mix together:
    2 lbs ground hamburger
    4 eggs
    1 box turkey or pork stuffing mix
    1 package Knorr Sides Plus (chicken rice with harvest veggies)
    1 can cream of chicken or mushroom soup
    1/2 can milk
    1 package onion soup mix (optional-i dont put this in mine)

    make that into meat balls. we put 15 large meatballs in a 9x13 pan.

    then mix 1 cup cream of mushroom or chicken soup with 1 can milk and pour over top.
    bake 1 hour at 350
