  • One of my recent favorites is chicken stir fry - I get skinless boneless chicken breasts and cut them in 1 in pieces and saute them, then take them out and stir fry some veggies (if you are pressed for time you can get some frozen mixed veggies), add the chicken back in, mix together some soy sauce and cornstarch (to thicken) and add to the pan. You can add in any additional things you like - water chestnuts, canned cubed pineapple, chinese noodles, etc. and serve with rice. It's always fun to get fortune cookies for dessert when we have this!

  • I break up my week by alternating proteins. One day beef, once day poultry, one day fish, one day vegetarian and one day pork or lamb.
Once I have that than I look online at different recipes that look interesting and print them. I look at what ingredients I need and go shopping from there.

  • My kiddos love when I make....well I really dont have a name for it...LOL. I just cook up some egg noodles, chop up some chicken breast and mix it with shrimp in a skillet (seasoned of course), then mix it all together. Simple, nothing meal...but they LOVE it.

Sometimes i'll put pasta sauce on it, sometimes I flavor the noodles with chicken broth...depends on my mood.

Rolls and a salad as sides are a great touch.

  • i used to use menus4moms when i got stuck. often i would substitute/adjust, but it gave a starting place. they have changed it up, but there are still free menus on there. when i try to meal plan on my own i always make it overly complicated.

yummy things that can be made easily and quickly: tilapia filets - sprinkle with Tony Chachere's seasoning and pan fry, serve with a vegetable and a grain/pasta side and a mixture of avocado and plain yogurt (for the fish). seasoned pork tenderloin - cut in half lengthwise and put on the foreman grill.

    My family loves:
    Chicken tortilla soup
    Hoppin John Chowder
    Spinach Casserole
    Tilapia and Salmon Fillets

    We love our veggies too.

  • Chicken Enchiladas, so easy and yummy. My family loves this dish.

    4 boneless/skinless ch. breasts
1 can cream of mushroom soup
1 soup can of milk (just dump in the soup and fill can w/milk)
    1 small tub sour cream
tortillas (not sure how many, no more than 8 probably)
shredded cheese (about 2-3 cups, I use sharp cheddar but you can use whatever)

    Preheat oven to 350
Cook chicken, shred it or just cut in small cubes
Bring to boil soup, milk and sour cream (you can add green chili's if you want, my kids don't like them) and then simmer
Put some of the cream mixture in the bottom of a dish 8x8, or similar size
Take a tortilla, put some chicken in, cover w/ sauce and sprinkle with cheese, roll up and put in dish. Repeat untill dish is full, pour remaining sauce on top, cover with cheese and bake for 25 min.
