  • 1 egg
    1 1/3 cups milk
    1 cup sour cream
    1/4 cup vegetable oil
2 cups self-rising corn meal mix
    1 (8 ounce) can cream-style corn

    Preheat oven to 425*f
Grease a 9" cast iron skillet
In a large bowl, beat the egg, then add the milk, sour cream, oil, and cream corn.
Add corn meal mix and stir just until combined. Do not over-work batter.
    Pour into greased skillet
Bake 25-30 or until a toothpick comes out clean. Best served in the skillet!
