  • I've got a great recipe for a turkey meatloaf, it's tasty and healthy, and SIMPLE!

    4 egg whites 1/2 tsp garlic powder
    1/2 cup ketchup 4 oz (1/2 cup or so) oatmeal
    1 c. sauteed onion black pepper
    8 oz tomatillo salsa 1 lb ground turkey
    1 envelope vegetable soup mix
    Mix all ingredients except ketchup til combined. Place in a meatloaf pan and cover top with ketchup (or if you like it spicier, top with more tomatillo salsa). Bake at 350 for 1 1/2 hours or til a thermometer in the center reaches at least 165 degrees.

    We serve it with a side of corn or other favorite vegetable, mashed potatoes, and rolls.

  • Here's an easy and delicious recipe:

    Lemon Parmesan Chicken

    4 split chicken breasts slightly pounded
    Sprinkle with salt, pepper, garlic powder to taste and squirt juice of 1/4 lemon. Cover with foil and bake at 375 for 30 minutes or until no longer pink. Drain off most of the juice.

    While chicken is baking, mix together 2/3 cup Hellman's Mayonnaise, 1/3 cup parmesan cheese, juice of 1/2 of lemon, 1/4 tsp black pepper, 1/2 tsp garlic powder and 1/2 tsp dried parsley flakes.

    Remove foil from chicken and smear mayonnaise mixture on top of chicken. Place under broiler for 3-5 or until golden & bubbly. Enjoy!
