can anyone give me a good recipe for jamaican style curry chicken?

  • First have all your chicken cut in small pieces not too small, next wash with vinegar rinse properly, add your seasons such as curry power, blackpepper,lawry's seasoned, garlic power, salt and ground ginger power, along with your fresh thyme ,scallion and rub altogether and start cooking add a small amount of water to cook chicken , when chicken is cooked half way add your potatoes cut into small pieces with a teaspoon of sugar simmer untill chicken is done then you make you sauce with a teaspoon of cornstarch with a 1/4 cup of water.

  • clean chicken first - if legs and thighs take off skin. Season chicken well - but do not put curry powder on chicken!!! Season like you would for any other dish let sit for at least an hour or overnight is best. Take a large pot with enough vegetable oil to just cover bottom - let it get hot. Put chicken in and brown chicken on both sides and then remove to separate pan. Take curry powder (must purchase indian style or jamaican style) approx. two tablespoons and add a little water to make a paste out of it. Cut up at least one onion or a batch of scallion, one clove garlic, and 1/2 green pepper. In same oil, sautee the above. Pour off any excess oil. Now add curry paste to veggies stiil in pot - make a roo (a pasty gravy) now add back chicken and add just enough water to cover. Cover large pot and cook on medium to low flame for about an hour -- ooops - I forgot - add potatoes cut into small squares with the chicken.
