Mashed cauliflower

Part 1) Does anyone like mashed cauliflower?

Part 2) Does anyone have any mashed cauliflower recipes or anything they add to make it taste different (besides the usual milk, butter, S&P)?

  • I love using it as a substitute for potatoes. Try adding cheese, or anythig else that ou would normally put into mashed potatoes, like garlic or sour cream and chives...

  • I steam it in Chicken Broth and then puree it to sneak in my 16 year old's food. I also puree many other fruit's and veggies. He's a really picky eater and he knows I hide the good stuff in everything but we're on a 'don't ask don't tell' policy...lol I've also substituted it for potatoes.

  • Mock Mashed Potatoes
    (From p. 171 of the South Beach Diet book.)

    4 c. cauliflower florets
    1 oz. I Can't Believe It's Not Butter! Spray (2 T.)
    1 oz. Land O'Lakes Gourmet Fat-Free Half & Half (1/8 c.)
    Pinch Salt
    Pinch freshly ground pepper

    Steam or microwave cauliflower until soft. Puree in a food processor, adding the butter spray and the half-and-half to taste. Season with salt and pepper

    Serves 4
