  • One-Dish Chicken Bake

    Prep time: 10 minutes
    Baking time: 35 minutes

1 pkg. (6oz.) Stove Top Stuffing Mix for Chicken
4 boneless skinless chicken breast halves (about 1-1/4 lb.)
1 can (10-3/4 oz.) condensed cream of chicken soup.
1/3 Cup sour cream or milk

Stir stuffing crumbs, contents of vegetable/seasoning packet, 1-1/2 cups hot water and ¼ cup margarine, cut-up, just until moistened; set aside.

Place chicken in 12x 8-inch baking dish. Mix soup and sour cream; pour over chicken. Top with stuffing.

Bake at 375 F for 35 minutes or until chicken is cooked through.

    Makes 4 servings

**we're a family that likes it's stove top, so we double the amount of stuffing.

  • Take 2 large or 3 small chicken breasts, put them in the crock pot, pour in a can of green chile enchilada sauce and a chopped onion. Set on high for 4 hours. Pull the chicken out and shred it, toss it in a little sauce. The amount depends on you, just do it to taste. Serve as a burrito or taco filling. Don't use red sauce, the vinegar in it doesn't handle the crock pot well, it winds up tasting like straight vinegar.
