What would you serve with stuffed bell peppers?

I'm making quiona stuffed bell peppers (not that it matters), for a book club I'm hosting next weekend. My mom always made them (with beef), and never had sides. I know I need some kind of side what goes good with them?

  • I always make stuffed peppers as a stand alone dish ( w/beef, but I remember you're the Texan that doesn't eat red meat :).. How about shrimp cocktail.. nice easy appetizer.

  • Cold rice salad
    Caprese salad - tomatoes, mozzerella and basil drizzled with balsamic vinegar and olive oil
    chips and dip for when they arrive and for munching.
