For those who make home-made mac and cheese do you add flour?

My recipe calls for 16 lbs of elbow pasta with 1 pint of heavy cream, 1 lb of cheddar cheese, and do I need to add some flour to it? I don't remember or... is that it? Bake it on 350 and add tomatoes on top! ;) With some pepper and salt for taste :) ?

  • I don't use flour in mine, but I don't bake it either. It usually has enough cheese to thicken it. If you knock your milk down to 2% you can cut a ton of calories without really changing the texture much at all.

  • @Rhianna I agree that is true even whole milk would be better then heavy cream. LOl at least it's going to be good

  • I didn't use any in mine either and it turned out really good and creamy it had a thicken texture and was just right.

  • When I make the cheese sauce apart, which I usually do because I make extra for nachos (yum!) I do add flour and butter to make a bechamel and then add the cheese. If I'm in a hurry, I thicken the milk/heavy cream with some cornstarch dissolved in a bit of water.
    As Brawny said, a bit of ground mustard (or plain old mustard if you don't have the dry) really makes the Mac & Cheese pop.

  • My recipe doesn't but I do sometimes add a little flour to the butter and milk to make it thicker.
