Has the heat forced you to become creative with cooking dinner?

I made a grilled eggplant parm on the grill that was so good and easy. It was also less calories because I didn't bread and fry the eggplant. I cut the eggplant the longway about 1/2 in thick and just brushed them with olive oil. I grilled some Kumato tomatoes and put on top of the grilled eggplant and then topped it with smoked mozzerella cheese. It was so good. With the leftovers I made eggplant parm sandwiches using sub rolls and toasted in the toaster oven.

  • Robin, please send some my way. It's obnoxiously hot and the ride back to our apartment on the light rail was packed with no air. I'm ready to give the kids ice cream and call it a day. At home I'd fire up the grill and eat in the basement. I've done all sorts of stuff on the grill including, pizza, lasagna, challah and pies.

  • not really here, either. i hate to cook..i love to grill outside, if i'm not sweating to do it. i just don't cook things that use the oven too much..yep, it gets to be the same old-same old thing, but...the bellies get full, and all is well regardless. lol.

  • Man, I'm even taking pot holders out to the grill because the handle is so hot it gave me blisters on my hand the last time I went out and lifted it bare handed. But yes, I refuse to turn on the oven inside right now when we are fighting to keep it cool.

  • I use the crock pot more during the summer. That way my oven doesn't warm up the house.

  • a little. we have just been eating more sandwiches and wraps than normal, and when one of us does cook, we make enough to last at least 2 meals so we can just reheat leftovers in the microwave.
