I use ground turkey instead of ground beef. I combine 1 lb ground turkey with an egg white, bread crumbs, and dry onion soup mix. Cook it on a griddle til it's done, then take the drippings from the meat, add it to a skillet with some butter, an equal amount of flour. Brown this like a roux, then slowly add in some milk, then salt and pepper and boil til thick to make gravy. Serve with biscuits. Yum.
