  • Veggie Sandwich: Toast some Healthy Nut bread on one slice spread some Hummus on the other slice place slice avocado, thinnly sliced red onions, cucumbers, tomato & salt/pepper taste.

    Or make pouches of salmon with fresh dill and lemon & sea salt serve with steamed zucchini, carrots & yellow squash over brown rice

  • My son and I love chicken wraps. You pull the meat off of a rotisserie chicken. Mix a little bit of lowfat mayo and a pinch of low sodium taco seasoning together. spread that on a whole wheat tortilla and put chicken, shredded lettuce and cheese on top. Roll and serve with Sunchips or Low Sodium Lays potato chips.

  • Spaghetti Salad
    1 large tomato, chopped
    1 small cucumber, diced
    3 green onions, chopped
    1 avocado, chopped
    2 T. Chopped fresh basil
    8 oz. spaghetti, cooked, rinse in cold water

    Feta cheese crumbled

    ¼ cup red wine vinegar
    2 T. honey
    1 T. lemon juice
    1 T. salad oil
    1 small garlic clove minced

    Place cooked and cooled spaghetti in a bowl, add veggie’s , toss with dressing, sprinkle feta on top when you serve, shredded cheddar works too, but feta is better.
