Need some serious help with meals for boy kids girl friend

Boy kid (will be 18 in spring) has girlfirend who, who, due to health issues, is eating vegitarian. We really like this girl and want her to feel comfortable when she visits but I have NO idea how to prepare easy, inexpensive but tasty vegitarian meals for lunch and/or dinner. Hoping some of you wonderful gals can help me out with some receipes.

  • i am a vegetarian and pasta dishes without meat can be inexpensive as long as you are not making something super fancy. i also eat a lot of egg things. there are a lot of resources online that i use. i just type in inexpensive vegetarian meals. i also have a recipe for home made mac n cheese that is inexpensive and fantastic.

  • Creamiest ac n Cheese:

    Ingredients:
    1 16oz box pasta (shells, macaroni, bow tie) I used 3/4 or 12 oz for this recipe
    4 Tablespoons butter
    1 can cheddar cheese soup(10 3/4 oz)
    1 can evaporated milk (12 oz)
    1-2 cups grated cheddar cheese
    Salt and pepper to taste

    Preparation
    Cook and drain noodles. Add back to warm pot, stir in butter, cheese soup,
    and half the can of evaporated milk. Stir until combined.
    Add 1 cup of cheese to start with, add more until desired cheesiness.
    Keep the burner on low to help melt things together.
    If it gets too thick, add some reserve evaporated milk to thin down
    Add salt and pepper to taste

  • oh and i use the whole box and get about 7 servings, but you can easily double it because i have in the past.

  • Cooking vegetarian is super easy, and cheaper than cooking with meat.

    Just make any normal dishes and omit the meat.

    Some ideas:

    -Black bean, corn, and rice burritos (Zatarain's Black beans and rice with added corn and tomatoes does the trick)
    -Meatless spaghetti, or with meatballs served on the side
    -Cheese ravioli
    -Vegetable stir-fry over rice
    -Baked potato soup
    -Split pea soup
    -Yams, carrots, and onions sliced into chunks and baked at 400 until done
    -Pancakes

  • My favorite quick lunch:

    Bean casserole

    1 can pinto beans, drained
    1 can black beans drained
    1 can corn drained (although I prefer a bag of frozen corn)
    1 jar of salsa

    Mix together and bake. I sometimes add a chopped onion, sometimes I add a small can of chopped tomatoes, usually top with cheese. Serve as a dip, or over tortilla chips, over a baked potato, over rice or with tortillas. Quick, easy, cheap and very versatile!

    My minestrone soup recipe is vegetarian, and my whole family enjoys it.

    Also, it's easy to keep some boca burgers, or morning star "chiken" patties in the freezer for a quick meal

    All bean chili...serve over fries

    If she eats eggs, breakfast for dinner, quiche

    Quesadillas


    veggie fajitas, or veggie stir fry over rice

    felafels (mixes available in the store)

    pinto bean or black bean taco salad

    It will be nice to have food here that she can eat and enjoy.
