Traditional fried rice is just rice fried in sesame oil, seasoned with dark soy sauce and green onions, and egg. It's easy to make, but you'll get the best results if you make the actual rice the day before. Cold, separated rice is the best. First prep. for chicken fried rice you'll need diced chicken, minced green onions, diced water chestnuts, whatever veggies you like (some people like peas and diced carrots; I prefer snap peas, sliced diagonally a couple times, and a little shredded carrot)
Heat sesame oil in a wok or large frying pan. Add the chicken, green onions, and veggies. Stir-fry for 2-3 min, then add the rice. Toss and stir-fry for another 2-3 minutes. I like to mix soy sauce with a little oyster sauce and hoisin sauce. Add to the rice mixture and toss. Push the rice to one side of the pan and crack an egg into the pan and scramble it. Once it is almost cooked, stir into the rice. Toss for a minute or two more.
