Easy Venison/Squirrel Recipes

I cook a lot of game, at least 3-4 times a week. I need some new dishes that are easy & don't include wine or only cooking it until it's rare. I make deer tacos, spaghetti, meatloaf, soup & roast. I make squirrel soup & a creamy casserole over biscuits. Help!

  • We cut little steaks--loin or whatever--so they are about the size of a deck of cards or so but are thin--about 1/4 thick. I marinade these in McCormick's Mesquite marinade. I then fry them--no oil needed since there is oil in the marinade--and they are really good. I often season them with crushed peppers. They can then be served as is with sides or cut and used in tortillas with a rice mix for fajitas.

  • scaredmommy08, apparently you've never ate wild game when it's cooked well. It's wonderful & most people don't know I've switched meats on them.
