Another pumpin pie question...

do you cover your edges with foil while baking and then take off the last few minutes to brown it??

I always seem to get it too dark and I think that is how someone told me to do it before but I wasn't for sure.

  • That or they make rings to cover them and since I used to bake a lot of pies I have a ring.

  • I have never done that, but I have seen and heard people do it..
    your oven may be too hot (there's a thermometor to find out)

  • I do it the other way, I cook the pie without foil until the edges are golden brown. Then I take it out and cover the edges with foil. If you try to brown at the end, your pie may be cooked before the edges are done. :)

  • I've never had a problem with pumpkin, but yes, with others I'll wrap maybe an inch of foil around just the very edge and take it off after about 15 minutes.
