Any ideas of what to add into cornbread mix to make it a meal in itself?

Looking for something different...but good.

  • You could make a filling with chicken, veggies, peppers, onions, etc.. top it with the prepared cornbread mix. Tamale pie style.

  • you can make chili and top it with cheese and then the corn bread mix top, bake it together to make a 'pot pie'

  • I make mine in a skillet, let it bake partially, and then pull it out. On top I put cooked taco seasoned ground beef, top with cheese, and continue baking. When done, top with diced tomatoes and sour cream.

    Tamale pie is also a classic, delicious way to make it into a meal.

    Impossible Taco Bake
    (9-12 Servings)
    3/4 cup"JIFFY" Baking Mix
    1 lb. ground beef
    1/2 cup chopped onions
    1 pkg. taco seasoning mix
    1 can (4.5 oz.) chopped green chilies, drained
    3 eggs
    1-1/4 cups milk
    Topping Suggestions
    shredded cheddar cheese
    diced tomatoes
    sour cream
    shredded lettuce
    sliced black olives
    Preheat oven to 400°.  Grease a 13”x9” pan.

    Brown ground beef and onion.  Drain.  Add taco seasoning and mix well.  Spread mixture evenly in prepared pan.  Sprinkle chilies over mixture.  In separate bowl, combine baking mix, eggs and milk; mixing until smooth.  Pour over chilies and bake 25-30 minutes.  Cool before toppings are
