This one's good. I use chopped walnuts instead of raisins, or along with raisins. I've also topped the bread pudding with frozen blueberries.
12 slices day-old bread
4 tablespoons butter or margarine, melted
1 cup raisins (or chopped nuts)
8 eggs, beaten
4 cups milk
1-1/2 cup white sugar
2 teaspoons cinnamon
2 teaspoons vanilla extract
Preheat oven to 350 degrees.
Tear bread into small cubes and layer in greased 9 by 13 inch pan. Drizzle melted butter over bread. If desired, top with raisins or chopped nuts.
Combine eggs, milk, sugar, vanilla, and cinnamon. Blend well and pour over bread. Push bread down with a fork till it is all coated with the egg mixture.
Bake 45 minutes. Serve with warm syrup.
