Easy recipes?

My 15 yo has autism and is in a high school special education classroom. They are about to start a kitchen unit and their teacher asked us to send in any easy recipes we have (main dishes, sides, etc.). I have a few ideas but was wondering if anyone else had recipes that would be easy for them to prepare.

  • cream of mushroom soup w/1/2 can milk
    mix in 8x10baking pan
    throw in shredded chicken
    roll 8-10 crescent rolls with shredded cheese in the middle
    place on top of mixture in pan
    You can toss a little extra cheese on top of everything if you want
    bake at 350 for 10 - 15 minutes

  • Easy Peach Cobbler Crunch

    29oz can of Peaches
    1 Yellow Cake Mix (dry)
    12 tsp of Butter (NOT melted)
    1 cup of Brown Sugar

    Preheat oven to 350 degrees
    In a 9X13 pan pour the whole can of peaches on the bottom and cut up peaches to bite sizes.
    Then Pour the Yellow Cake Mix (dry) evenly over the peaches.
    Then put 12 teaspoons of butter evenly over the top. (like all spaced out, how you would put cookies on a pan)
    Then Pour the Brown Sugar evenly over the top.
    DO NOT STIR, just put the pan in the oven for 40 minutes!
    eat and enjoy! I Like to eat it with Whipped topping or icecream! :)

  • I don't have "recipes" but there are things I throw together when I'm lazy. Here's a few off the top of my mind.

    Chicken quesadillas - Canned chicken breast, shredded cheese, tortillas, optional veggies. Pan fry and season canned chicken, mixed with shredded cheese and optional veggies and stuff between tortillas. Cook. Serve with salsa, sour cream, etc.

    Chicken Alfredo - 2 packets of Alfredo sauce mix (jarred would work too I guess), pasta, ready to use grilled chicken breast strips, bag of "steam in microwave" broccoli florets. Cook alfredo sauce according to package, boil and drain pasta, heat up chicken, steam broccoli, mix everything together.

    Tuna casserole - Egg noodles. can of tuna, cheese, mushroom soup, breadcrumbs (I use Italian style), optional veggies. Boil egg noodles and drain, mix in mushroom soup, can of tuna, veggies, transfer into baking disn. Top with cheese and breadcrumbs, bake until cheese is melted.

  • Babykar - I'm not sure they could get crockpot stuff done during class, but I am doing some cooking with him at home too and compiling his favorites in a cookbook for him in an effort for him to become as independent as possible - so yes if you have an easy crockpot recipe it would be appreciated

  • Spaghetti Chicken
    brown chicken parts (your choice of parts)
    after browned, pour off oils
    1 jar of spaghetti sauce - pour over cooked chicken let cook
    1 pkg. spaghetti pasta (your choice)
    Pour sauce over pasta - voila!
    Sooo yummy and so darn easy!

  • 7 layer Mexican Taco dip
    1 can refried beans at bottom of dish (at least a 4 inch dish) spread out to all areas of dish
    1 pkg taco seasoning - sprinkle over refried beans
    1 8 oz tub sour cream - spread over seasoning and beans
    1 jar salsa - spread over sour cream
    1 pkg shredded cheddar cheese - spread over mixture
    2 tomatoes cut in to tiny chunks spread over mixture
    4 green onions - chopped - spread over mixture
    1 bag of scoops
    He will be the hit of the class! It's awesome!!

  • Hello Dolly Bars
    /2 cup unsalted butter
    1 cup graham cracker crumbs
    1 cup semisweet chocolate chips
    1 cup butterscotch chips
    1 cup coconut
    1 cup chopped walnuts
    1 can (15 ounces) sweetened condensed milk
    Melt the butter; mix in graham cracker crumbs. Pat crumb mixture in a 9-x13-inch baking pan. Sprinkle the remaining ingredients over the crumbs in order given, in layers. Drizzle the sweetened condensed milk over all. Do NOT stir. Bake at 350° for about 25 minutes. Cool and cut into bars.

  • Taco Cheese Dip

    8oz cream cheese
    8oz sour cream
    8oz shredded cheddar cheese
    8oz Green Onion Dip
    1 Pkg taco seasoning

    Mix it all together & Dip with tortilla chips!!

  • Use a box of Jiffy cornbread mix, add about 1/2 cup broccoli, 1/4 cup green onions sliced very thin, and cheddar cheese. Makes a great muffin to eat with soup or salad or alone as a snack.
