Blueberry muffin french toast... Oh yes, I did!

This morning I was a culinary genius. Trust me... it rarely happens so when it does I have to brag.

Yesterday I made blueberry muffins, but didn't have enough cupcake liners to make them all as muffins. So I just baked them in a pie dish. We ate the muffins yesterday, but had the big one left. I poked holes all over it and poured an egg and milk mixture over it and rebaked it. It came out DELICIOUS! And just like a giant french toast blueberry muffin. Super moist and dense.

  • This is the recipe I used for the muffins. Basically was one batch in the piepan. Then I used 6 eggs and 1/8th of a milk. Next time I would add a bit of salt to the eggs.


    Now you can make it too ILovemyPaulie.
