Sauce thickeners?

Are there any sauce thickeners that won't make my sauce creamy? No to flour or cornstarch.. drawing a big blank here! Thanks.

  • it's called a slurry and it is a mixture of cornstarch or flour and water at the end of the cooking time. It does not make anything creamy. You will see slurries used in Gumbo, soups and stews. A roux is flour with fat like butter or actual fat like from bacon and used at the begining of cooking.

  • Cornstarch won't really make it creamy. Grind up some tapioca, boil it down, that's about all Iv'e got.

  • You can use cream and plain yougurt to make a wonderful cream sauce.

  • i thought you got creamy from butter flour and milk, i.e. cream of_______ soups.
    i thought cornstarch was good for like stews

  • butter mixed with flour (beurre manie) because it won't get lumpy. Melted butter, that is..whisked with flour.
