A Cake in Peril!

I was planning to make a lazy daisy cake to send to a potluck church event tomorrow, whether I feel up to going or not. Before my boyfriend went to the store, I asked him to make sure we had brown sugar. He says he checked and we had it, but I'm not finding it. He doesn't have his cell phone with him, battery is dead. So the deal is, to make the topping, you're supposed to use evaporated milk, butter, brown sugar, and flaked coconut, then spread it on the hot cake and stick the whole thing back in the oven for a few more minutes of baking. What would happen if I used plain white sugar? Is there something I can add to make it taste brownier? I knew I should have stayed in bed!

  • dark corn syrup could help you in a pinch.... the idea is to mix about 2 tbs of molasses, dark corn syrup or maple syrup to a cup of white sugar...

  • Brown sugar substitute
    cup sugar
    3 tablespoons molasses
    In a food processor combine both ingredients and process till combined.

  • I've never heard of that kind of cake - can you post the recipe? Sounds good if it's got brown sugar on the top!
