Commodities gave us too much this month

What can I do with 15 heads of cabbage and 20 blocks of cream cheese? We are a family of 5. Can I cook and freeze the cabbage?

  • I would make a big batch of coleslaw! I would donate the rest of the cabbage, you can freeze the cream cheese for about 3 months.

  • Coleslaw, stuffed cabbage rolls, fried cabbage with bacon, big kettle of veggie soup with cabbage in it. Give some to friends.

  • What is Commodities? You could make Colcannon -cut cabbage into bite size pieces, chop a large onion. Boil potatoes until they can be mashed. Set aside. Add Cabbage & onion to potato water and boil. Drain. Mix ground black pepper, salt, cabbage & onions to potato with 1/2 cup sharp cheddar. Put into casserole dish and bake at 350 for 30 minutes until heated through. Last 10 minutes place 1/4 cup cheddar cheese on top. This is good as a side dish or as a vegetarian entree with salad and crusty bread.

    The cheese can be frozen just put it into freezer bags.

  • Also look up Jane Brody Good Food Book online she has lots of good casserole recipes that use cabbage. You can also make Mexican Caldo (Soup). Brown stewing beef, sit aside, Chop Onion, Cabbage, 2 carrots, 1 large potato, one corn on the cob cut into 8 slices add 8 cups water and browned beef. Bring to a boil, simmer about 45 minutes to an hour. Serve with corn tortillas and chopped tomatoes, cilantro, onions and jalepenos. Very good and nutritious.
