  • It is the best cake ever! I should warn you, it's addicting.

    3 cups cake flour
    1 teaspoon salt
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    2 cups sugar
    1 cup butter, softened
    4 large eggs, room temp
    1/4 cup sour cream
    1 cup buttermilk ( I make mine homemade)
    2 teaspoons vanilla extract
    1/4 cup sugar
    1/4 cup sweetened flaked coconut

    Sift together cake flour, salt, baking powder and soda. In a large separate bowl, beat butter until very fluffy, then add 2 cups of sugar. Continue to beat until very fluffy. Beat in eggs, one at a time. Mix in sour cream and vanilla extract.

    Blend buttermilk in a little at a time with dry ingredients. Grease, sugar and flour a bunt pan. Spread coconut on the bottom. Bake about an hour. I top it with a vanilla almond glaze. It so simple and delicious.

  • My kids are having leftover spaghetti and turkey meatballs. My husband is having some lasagna he had made at Christmas and frozen. I will probably have some sort of boring diet crap.
