Homemade buttermilk?

I was intrigued by the mention of homemade buttermilk in the Louisiana Crunch Cake question. I like the taste of buttermilk in baking but don't always have it on hand. How do you make it?

  • 2cups of regular milk and 1tsp of white vinegar. Stir and let it sit 5 minutes. Voila, buttermilk! I hear lemon juice works too, but I've never tried it.

  • buy a quart of heavy whipping cream. start like you're going to make whipped cream, but keep beating it beyond the whipped cream stage - it'll start seperating into butter & buttermilk. you can also put it in a jar and shake it but i prefer mixer method. Strain it, rinse the butter, and you have fresh butter & buttermilk. this buttermilk isn't nearly as thick as the buttermilk you buy though.
