Do you cook with pumpkin?

I'm trying to make a healthy alternative chili. This particular one suggests using pumpkin to provide the Vitamin A. I've never heard of that, but am wondering if anyone else uses it.

Healthy Chili Recipe

Now I'm curious about using it in other recipes as well.    What do you think?

  • Not in chili but you can substitute up to 1/2 of the fat with pumpkin puree. The product will be a little denser but it works very well on the side of reducing fat and adding vtamins

  • That recipe looks yummy! If I hadn't just been to the store for my normal chili stuff I'd try it tonight lol! I've never cooked with pumpkin, only baked - I love pumpkin!

  • Yes, we put pumpkin into all sorts of things. We add a whole can of pumpkin to our spaghetti sauce. My husband makes the BEST meatloaf with pumpkin. I have made a pumpkin turkey chili before, that my sister found on the Butterball website. It was really good.

  • I use pumpkin in my chili to make it thicker. It's delicious and the kiddos don't even know it's in there.

  • Yes in a Spanish soup called sancocho it's really good it's seriously my favorite soup. I can give you the recipie if you'd like?
