What's on the menu tonight?

I'm going to make roast beef hash. It's one of my boyfriend's favorites, which his mom always used to fix when she had leftover beef. I never made it till he and I got together, but I really like it, too. My preschooler has decided this month that she doesn't like potatoes, so we'll see what happens.
