Evaporated milk...

I bought two cans thinking I needed it for something, then it turned out I didn't.

Anyone have any good recipes that call for it?? I don't want it to go to waste!

thanks ;o)

  • Chill it, whip it and add it to (reduced water) jello. Makes a great fruit mousse.

  • You can use it pasta sauce! I once thought I was getting evaporated milk and got condensed, that was not good alfredo sauce, LOL

  • My mom makes a crazy good rice casserole that calls for it.

    2 cups cooked rice
2 cups (8 oz.) Monterey Jack cheese, shredded
1 1/2 cups chicken breast, cooked and chopped
1 can (12 oz. each) evaporated milk
1/2 cups red onion, finely chopped
    2 large egg, lightly beaten
1/4 cup fresh cilantro leaves, finely chopped optional
2 Tbsp butter or margarine, melted
1 Tbsp jalapeƱo pepper, diced (optional)

preheat oven to 350 degrees. Grease a 2-quart casserole dish. combine ingredients well in dish. bake 45 to 50 minutes or until knife inserted in center comes out clean.

It has a fantastic texture to it. I recommend short grained white rice.

  • It won't go to waste; that stuff lasts forever. Use it in place of the milk in rice pudding, baked goods, really anywhere.

  • I use it in our mac and cheese. Google it with macaroni and you'll see lots of recipes

  • Usually there is a recipe on the can, or on the back of the label, peel it and try something from there?
