Is Tiramisu supposed to have egg whites in it?

I've seen recipes for with and without. I tried one from Giada that didn't use it and it turned into a goopy mess.

  • From what I could find on Google, authentic tiramisu uses raw eggs. But a lot of recipes seem to use gelatin instead.

  • Yeah, they say to separate the egg yolks from the egg whites. It's not clear if you really need to use whipped egg whites though since some recipes don't have them and only say to use the yolk. I think I"m going to try it with the egg whites next time.
