anyone know how to make Santa Fe Mini Chimi's?

Santa Fe Mini Chimi's

Smoked chicken, black beans, corn, Jalapeno Jack cheese, red peppers and spinach rolled into a crispy flour tortilla. Served with Ranch dressing.

  • ash when i use spinach for something like that i like to use the frozen. sounds good though are you making them tonight

  • Well, you got all the ingredients there! You have to cook the chicken ahead of time, I usually use a can of black beans for convenience. Then you wrap them in a flour tortilla and fry them in a skillet or deep fryer. Keep the oil on medium heat or they burn too fast. They are also good dipped in an avocado sauce like guacamole, or a creamy mixture of avo, sour cream, salt, pepper, and hot peppers, with a splash of lemon juice. Really eazy, and really good for company!

  • I like the fresh stuff....You can use salt and pepper, usually I don't use much, the filling kind of flavors itself. If you like hot stuff use chile powder. If you use fresh black beans boil them in chicken broth, they are really good like that!
