When it comes to brownies..

less eggs = fudgier brownies right?

i ask because i thought that was the case, but then someone told me that MORE eggs would be fudgier because it would make them more moist. the recipe called for 2 and i put 3. needless to say it was like eating muffins :(

so next time, if i want them more fudgy and the recipe calls for 2, should i just put 1?

  • Yes, you're right. More eggs make them more cake-like.

  • Amount of flour also has an impact. The recipe I use only takes a very tiny amount, and they're fudgy. Other recipes take a lot more and they just turn cake-like.

  • Just leave out the nuts & have a glass of milk handy when they're out of the oven- I'll be over! :p (Sorry not much of a cook/baker- but I love chocolate!)

  • Also, for fudgier brownies, use a bigger pan. The more spread out the batter is, the less cakelike the brownies will be.

  • Amount of water makes a difference too - I've noticed if I even have an extra teaspoon they're cakier.
