Creamy yellow pepper soup?

Sounds yummy, Older. Can we have the recipe?

  • Sure thing! I get a yellow  onion, slice it thin and sautee with a bit of olive oil. add spices you like, I use all spice and some oregano, por the water according to how much soup you want to make and cut up two big yello peppers removing the seeds and the middle stuff. let it boil in high heat until the yello peppers is soft, then take off the heat and puree with a hand blender or with whatever you have, then add whipped cream cheese to thicken it a bit, or if you want thicker soup, just blend a couple of spoonfuls of cornstarch to a bit of water, and pour when it is boiling, stir until you get the right consistency...it is really a delicious soup, I sprinkle it with feta cheese before serving....
