I don't have canned diced tomatoes so can I substitute fresh tomatoes?

Will it make a huge difference. Should I roast them first?

  • I often do use fresh. They taste better and you don't have to worry about BPA lining the can.

  • If it's something like stew or chili, just chop up the fresh tomatoes and toss them in. If you want them skinned first, stab each one with a fork and dip it in boiling water for a few seconds. The skin will slide right off.

  • Fresh should be fine- actually better. The difference is that the canned are cooked, so if you need cooked then you can nuke the tomatoes or add them so they cook a little longer.

  • Of course you can, what is better than fresh, but leave the skin, this is one of the most nutritious part of the tomato..
