Stuffed pepper filling - what do you use?

I haven't made them in ages, and looking over my old recipe, not sure I'll be able to sell DS on it. Open to suggestions.

  • I have been wanting to try these pizza stuffed peppers... I think my kids might like them if I added the word 'pizza' to it... Plus it sounds pretty good! Though I do love traditional ones!

  • italian sausage, bread crumbs, roasted red pepers, mushrooms, and then smother in marinara and serve.

  • Basmati Rice or couscous, hot Italian sausage, fresh basil, garlic minced (I love garlic), red onion, sea salt, tomato sauce, cheese. I stuff both red and green peppers too.
