Vegetarians- what is a typical daily menu for you?

Just curious....

  • we are not 'full time' vegetarians but we do have several meatless days a week.
    On those days it usually looks like this:
    Breakfast- fruit and yogurt, cereal, waffles or eggs with cheese ( though that is every day really...)
    lunch- PB&J and fruit, grilled cheese and soup, cheese ravioli with red sauce or salad w/ walnuts and dried fruit
    Dinner- tofu nuggets, veggie spaghetti, cauliflower chili, lentil soup or black bean tacos.

  • Cereal and coffee for breakfast or protein shake, then sandwich (pbj or sprouts, cucumber, cheese, etc), then for dinner pasta, soup, veggie burger, mexi dishes with black beans, lots of Thai food, nuts/seeds for snacks. My diet has changed more in the last year for health reasons so I'm forced to add more protein so I've added fish and eggs and am trying to cut out gluten. I haven't eaten red meat since 8th grade.

  • I eat dairy so for breakfast maybe some scramble eggs with cheese and toast....lunch is a tempeh sandwich, ( this is soy protein), and for dinner vegetables either in soup or a  veggie casserole, I sometimes replace breakfast or lunch with a soy protein shake....this is a typical day for me but not an everyday menu.  I love to experiment with food and recepies (all meatless)
