Will this be good?

Could I use grape jam or orange? How about using turkey in place of ham?

12 slices boneless chicken breasts
12 slices ham or Prosciutto
1/2 cup ketchup
1/2 cup mayonnaise
1/2 cup apricot jam

Sandwich the boneless, skinless chicken breasts between two slices of waxed paper. Flatten each chicken breast by pounding with a mallet or the bottom of a heavy frying pan or other heavy object.
Place a piece of ham or prosciutto on each chicken breast and roll. Place seam side down in a shallow baking dish. Mix together ketchup, mayonnaise and jam.

Pour mixture over the chicken. Bake uncovered in a 350°F oven for 20-25 minutes.

  • That sounds disgusting.

    I make a crockpot meal using pork chops that uses apricot jam, dijon mustard, and teriyaki sauce, its very good. The mayo in your recipe throws everything off.

  • It sounds a little odd, but I've had odd dishes before that turned out to be really good. I don't see why you couldn't try smoked turkey in place of ham if you don't eat pork.

  • No, I wouldn't substitute the flavor of jam. Apricot goes great with chicken.
    I guess the using turkey instead of chicken isn't a big deal, but bear in mind turkey is sweeter.
