Making hamburger patties from defrosted hamburger

Every time I do it, the patties comes apart. Any ideas on how to stop that from happening??

  • Let it warm up to closer to room temperature than frozen before you try shaping it, and don't overwork it - section it, squeeze each section two or three times, then flatten it a bit between your hands. When you're cooking, never ever ever squish the patties ever - besides drying them out, it also makes them more likely to fall apart. You don't need to add anything to it, just season each side before it goes on and before you flip. And did I mention don't squish it?

  • I usually add some bread crumbs and an egg to mine to help the patties stick together.

  • Try adding an egg or bread crumbs/saltine crackers to the meat.
