1 pound ground beef
1/2 clove garlic, crushed
1 4-ounce can chopped, mild green chilies
1 16-ounce canned tomatoes, undrained
1 teaspon salt
1/8 teaspoon pepper
1 head of iceberg lettuce, torn bite-sized
1 cup (4 ounces) grated Cheddar cheese
6 ounces tortilla chips, crushed
1/2 cup chopped green onion
1 3-ounce can sliced olives
1 tomato, sliced
salsa and guacamole (optional)
Brown meat with garlic, drain. Add chilies, canned tomatoes, salt and pepper; mix well. Cook over low heat, covered, about 30 minutes.
Just before serving, arrange lettuce, cheese, chips, green onion, and olives in a salad bowl. Add meat mixture, toss lightly. Garnish with tomato. Serve immediately with salsa and guacamole.
