Ways to Use Hard-boiled Eggs (Jersey, the recipes you asked for ...)

Cheese Eggs a la King

1/2 cup chopped celery
1/2 cup chopped green pepper
1/2 cup finely chopped onion
1/4 cup butter or margarine
2 10-3/4 ounce cans cream of celery soup (or any cream soup)
2 cups (8 ounces) shredded Cheddar cheese
1 cup milk
8 hard-cooked eggs, sliced
8 slices toast, buttered

Cook celery, green pepper, and onion in butter or margarine till tender. Stir in soup, cheese, and milk. Stir till cheese melts. Then fold in eggs. Serve over buttered toast.

Sometimes I serve this over rice. My boyfriend wants me to add chopped, cooked bacon next time.

Eggs and Broccoli

1 10-ounce package frozen broccoli
1/2 teaspoon salt
12 hard-cooked eggs, cut lengthwise into fourths
1 11-ounce can condensed Cheddar cheese soup
3-4 cup milk
1 2-ounce jar diced pimiento, drained (I leave this out)
1 teaspoon parsley flakes
1/2 teaspoon dry mustard
1/4 teaspon dry basil
1/8 teaspoon onion powder
few drops bottled hot pepper sauce
1 cup crushed corn chips or potato chips

Rinse broccoli in cold water to separate; drain. Spread in 12 by 7 inch baking dish and sprinkle with salt. Arrange eggs, cut sides up, on broccoli. Mix all remaining ingredients except chips. Heat to boiling, then pour mixture over eggs. Sprinkle chips on top. Bake uncovered at 350 degrees for 25 minutes. Serves 6.
