What to use in place of eggs in a boxed cake recipe?

I boiled all the eggs this morning and forgot that I needed 3 for the cake. Can I replace them Greek yogurt or something ?

  • I googled and didn't find anything satisfactory that you might have on hand. For one egg milk and oil, but not for all three. Applesauce- but that makes a very dense cake.

  • I've seen the suggestion to use powdered gelatin as an egg replacer, but I'm not sure about the proportions, or how it would affect a cake.

    Use a 12 ounce can for all the wet ingredients

  • You can also use pumpkin, but it will change the taste. Not in a bad way, though. Or you can substitute the eggs and oil in the recipe with mayonnaise. Not Miracle Whip, just the plain old-fashioned mayo. That makes a nice cake. Not sure about the measurements, just add mayo a bit at a time till the batter is the right consistency. I always aske my mom to make my birthday cakes with mayo because the finished cake is very rich and moist.

  • I find that mayonnaise will give you a cake most similar to the egg recipe than would most of the other alternatives.
