If you were going to roast tomatoes

Would you slice them first or roast them whole?

  • I would slice them. The surface area would allow the water to cook off and they would get crisper and more caramelized. I love to throw a pint of grape tomatoes into a hot frying pan with a little EVOO until the skin blisters, add salt and pepper and a splash of balsamic vinegar and pour over salad greens. YUMMY!!!

  • Well, if I were going to roast tomatoes, first I'd wonder what the hell is wrong with me, because I'm not a fan of tomatoes. lol

    Being serious, though, what are you roasting them for? I'm thinking I'd probably slice them first, so they would roast faster and also have more surface area to get that roasted look and flavor, especially if I'm doing it for something like a spaghetti sauce where they're not going to be whole in the end anyway.

  • I just put them in a pan and roast them. Sometimes I puncture them.

  • Cut in half, cut side up. They're good roasted and then topped with Mozzarella cheese.
