Yes, but oil is a better substitute and keeps it moist. Chef Bobby Flay did this experiment between butter and oil in cakes and the ones using oil always turned out more moist. Vegetable oil has an equal conversion rate to margarine. However, olive oil is 2, 1/4 tsp to every tablespoon of butter/margarine.
