How do you make your homemade baked macaroni and cheese?

I attempted to make some from scratch today and it was just...well...not great lol. My kids will no longer eat it from the box so I need some recipes please:-)

  • Cheese-Tomato Macaroni

    2 tablespoons butter or margarine
    1/2 cup finely chopped onion
    2 tablespoons flour
    1 12/ounce can cocktail vegetable juice
    1/8 teaspoon pepper
    3 cups cooked, drained elbow macaroni
    1-1/2 cups shredded Cheddar cheese

    Melt butter or margarine in 2-quart saucepan, cook onion till tender. Blend in flour gradually, then slowly stir in vegetable juice. Cook, stirring, till thickened. Sttir in pepper, cooked macaroni, and 1 cup of the cheese. Mix well. Pour into a 1-1/2-quart casserole. Bake at 350 degrees for 20 to 25 minutes or till bubbling hot. Stir, sprinkle with remaining cheese and return to oven for a minute or two so the cheese melts. Serves 4 to 6.

  • Cottage Pasta Bake

    4 ounces fine noodles, medium noodles, or elbow macaroni, cooked and drained
    1/4 cup finely chopped onion
    1 clove garlic, minced
    1 tablespoon butter or margarine
    1-1/2 cups cream style cottage cheese
    1 cup dairy sour cream
    1 teaspoon Worcestershire sauce
    1/2 teaspoon salt
    dash pepper
    dash hot pepper sauce
    paprika and Parmesan cheese for sprinkling

    Cook onion and garlic in hot butter till tender. Add cooked noodles. Stir in cottage cheese, sour cream, Worcestershire sauce, salt and pepper, and hot pepper sauce. Turn mixture into 10 by 6 inch baking dish. Bake at 350 degrees for 25 to 30 minutes. Sprinkle with paprika and Parmesan cheese. Serves six.

  • Mine is super easy.
    Boil macaroni
    Toss with butter
    Make layers of noodles and american cheese slices (about 20 slices)
    If you have any other cheese (like shredded mozzerella or cheddar) toss that in there, too.
    Top with tomato sauce, salt & pepper.
    Bake at 350 for about 15-20 minutes

  • Easy crockpot version
    Box or bag of noodles...boil and drain.
    Grease or use crockpot bag liner
    Add noodles
    1 12 oz can evaporated milk
    12 oz of milk
    2 eggs beaten
    4 cups shredded cheddar cheese
    good sprinkle of salt

    stir in crockpot and cook for 3 to 4 hours ,stir a couple of times.
    Pam a 9x13 pan ,pour mac and cheese in pan ,bake 350 for 30 or so minutes .Check to see how baked you want it.
    I use egg beaters and all lowfat milk.I also have used a mix of cheddar ,swiss and gouda cheese.You can put breadcrumbs on top before you bake it also.

    I will make a traditional baked mac and cheese but I seem to be the only one that can tell the difference.

  • You can easily divide this recipe in half; use a 1 1/2-quart casserole dish if you do.

    Serves 12
    6 slices good-quality white bread, crusts removed, torn into 1/4- to 1/2-inch pieces
    8 tablespoons (1 stick) unsalted butter, plus more for dish
    5 1/2 cups milk
    1/2 cup all-purpose flour
    2 teaspoons kosher salt
    1/4 teaspoon freshly grated nutmeg
    1/4 teaspoon freshly ground black pepper
    1/4 teaspoon cayenne pepper
    4 1/2 cups (about 18 ounces) grated sharp white cheddar
    2 cups (about 8 ounces) grated Gruyere or 1 1/4 cups (about 5 ounces) grated pecorino Romano
    1 pound elbow macaroni

    1. Heat the oven to 375 degrees. Butter a 3-quart casserole dish; set aside. Place bread pieces in a medium bowl. In a small saucepan over medium heat, melt 2 tablespoons butter. Pour butter into the bowl with bread, and toss. Set the breadcrumbs aside. In a medium saucepan set over medium heat, heat milk. Melt remaining 6

  • 2. Slowly pour hot milk into flour-butter mixture while whisking. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick.

    3. Remove the pan from the heat. Stir in salt, nutmeg, black pepper, cayenne pepper, 3 cups cheddar, and 1 1/2 cups Gruyere or 1 cup pecorino Romano. Set cheese sauce aside.

    4. Fill a large saucepan with water. Bring to a boil. Add macaroni; cook 2 to 3 fewer minutes than manufacturer's directions, until outside of pasta is cooked and inside is underdone. (Different brands of macaroni cook at different rates; be sure to read the instructions.) Transfer the macaroni to a colander, rinse under cold running water, and drain well. Stir macaroni into the reserved cheese sauce.

    5. Pour the mixture into the prepared casserole dish. Sprinkle remaining 1 1/2 cups cheddar and 1/2 cup Gruyere or 1/4 cup pecorino Romano; scatter breadcrumbs over the top. Bake until browned on top, about 3
